Formidible showing IP of server not remote sender

when I ask Formidible to include the IP of the sender on a contact form, it is returning the IP of my server NOT the IP of the remote user. My host has suggested something like this: $_SERVER[‘HTTP_X_FORWARDED_FOR’] & $_SERVER[‘REMOTE_ADDR’]. but I have no idea how that works.
