The “destination folder already exists” error is one of the very “precise” errors and usually when it happens, it means exactly what it says – that the folder is there for some reason. It is often incomplete too.
Having said that, I understand that you have removed plugin folder from server. The folder that you removed was “wp-content/plugins/wp-smushit”, right? Or was it “/wp-content/plugins/wp-smush-pro”?
Please check “/wp-content/plugins” and see if any of those two folders now shows up there. Then make sure to remove it (so neither “wp-smushit”, nor “wp-smush-pro” would be there), clear all server-side cache (if there is any) and try installing plugin again.
If it fails again with the same error – take another look into “/wp-content/plugins” and see
– which of those folders got regenerated (wp-smush-pro or wp-smushit)?
– take a look inside and see if there are any files there or if it’s empty
– check your server hosting panel (or consult with your host) to see if there’s still free space available on the server
– ask your host to double-check if the server system “temp” storage is not full/clogged

– what kind of setup are you using – is it a regular single WordPress install or is it a Multisite setup?
– is WordPress core up to date (if not, which version are you using)?
– what’s the PHP version powering your site and what webserver (Apache, nginx, LiteSpeed, IIS etc)?
