I always receive text mails with the same pattern.
The emails always contain the following information

    Name: Max Mustermann
    Address: 11 Kings Road, London
    Birtday: 11.12.1988

How can I save this information in custom fields after the colon? Are there any instructions on how to do this?

I have already found the following page by searching:
    https://postieplugin.com/postie_post_before/
But unfortunately there is nothing there.

There isn’t much specified to Postie other than the filter which you’ve already found. After that it is standard PHP to find strings and WordPress functions to save the values.

I will mention that this can get tricky if you have html emails.

For example the email could look like:

    <div><p>Name: Max Mustermann</p><p>Address: 11 Kings Road, London</p></div>

With all text on one line. Or there could be line breaks.
