There are three hooks available in our WooCommerce Extra Product Sorting Options plugin that you might be able to use. They can all be found near the beginning of the add_new_shop_ordering_args() method.

As to how you are going to hook into those filters with your Ajax request(s), that might be outside what we can assist with without a great deal more context.
