I have been searching in vain for a plugin or method to display the featured image on one side of the main page with a description/summary beside it. I’ve tried to use the excerpts but I think it somehow interacted with another plugin to display the excerpt twice. Basically I would like the feed of posts to read like this: https://www.bohoberry.com/ instead of what I currently have. I’d love to do the summaries manually but I’ll take what I can get.
(I actually even emailed this blog with the question but got no response.)

A major layout change like this cannot be accomplished without tinkering extensively with PHP, HTML and CSS code.
If you’re not comfortable working with these, your best bet is to switch to a theme that lays out the content exactly how you want it.
You can find dozens of free themes that are styled this way in the official themes database, plus a whole lot more commercial ones by Googling.
