Extend Structured Data (e.g. Product – “Missing” optional values)

Hi,
I setup to use “Product” as structured data. I have 5 “missing” optional values:
How can I add these optional values? I’d like to setup e.g. brand globally (not for a single blog post, but for all). Is this possible? Can you give me an example?
