Extend display_summary function

I would like to extend the fields within the display_summary function, inside of em-person.php

There is a phone field already listed in the table, but I would like to hook that up to the phone field that I am using in the WP-Members: Membership Framework plugin. Can this function be removed and added inside of my theme functions file?
