    Sounds awesome!

You can but it is a bit inconvenient.

Go to the short code builder page,
    – pick any form
    – short code = [cfdb-export-link]
    – pick an “enc”

When it shows the short code, that text is clickable. If you copy that link text you get something like:
    https://site.com/wp-admin/admin-ajax.php?action=cfdb-export&form=FORMNAME&enc=CSVUTF8

If you change that “FORMNAME” to “*” then it will download data from all forms.

Similarly in a short code, you can set form="*" to have it apply to all forms.

Or if you want to select specific forms then list them out with commas like form="form1,form2,form3" (in the short code or in the URL)

You could create a private page with [cfdb-export-link form="*"] if you wished to save the link somewhere to click later.
