Excluding Specific Custom Fields

I want to include only SOME of the custom fields to speed up performance. I see that, in constructing the query string, I can either “include” or “exclude” custom_fields, but not specify WHICH to include/exclude. Am I missing something (I’m sure it’s me!).
This is a wonderful plugin, by the way!
