Exclude posts by category or tag

Hello!

How can I exclude posts from publishing to Apple News by category or tag?

I have entire sections or types of content that I don’t want to auto publish so it would be very useful to exclude those by default. There is also not on the post itself when editing an option to exclude or “do not publish to apple news” so I am a bit stuck.
