excerpt drop down box

This might be a little to complicated to to answer in one support thread but I thought I would give it a try. I am using the excerpt area to put in the names of bars and restaurants. When I go to make a post there are 5 steps that I have to repeat every time, put in the name of the bar or restaurant into the excerpt, put in the apprpriate tags from a dropdown (using ultimate tag warrior), enter in the address in the geopress(if it is not already saved), then type in the title of the post and the main content.

I would like to be able to have a dropdown box where I can select from bars and restaurants already entered into the excerpt (or add new ones) and then have that populate the information for the address and tags. Can someone point me in the right direction to do this?
