    This is just what I was looking for.

    I use the plugin Site Push to maintain a test copt of my live site. You can set that plugin to enable the Stop Emails plugin on the test site and enable it on the live site.

    I also use the plugin Log Emails to log outgoing emails. Emails get logged by this even when being stopped. This is a more comprehensive way of viewing what would have been sent than by logging to the log file.
