EU GDPR Regulations

Hi I a member of a volunteer organisation that consists of 52 lookout stations that are integrated into the search and rescue organisation in the uk. Quite a lot of the lookout stations have their own website.
Due to the new regulations we have been directed to remove members/users email addresses as it stands WordPress will not let use remove email addresses in the users section is there anyway this can be done?
We can keep users names provided each user signs a form to agree.
