Emails ‘disappear’ but say they have been sent

Was wondering if anyone could help me figure out what’s going on here. I’ve been pulling my hair out for the last 2 weeks trying to figure this out.
I have a WP-multisite hosted with GoDaddy. I have setup a contact form using ContactForm7 and I’m using the WP Mail SMTP plugin for SMTP to configure Outlook (though, that’s not the point – I’ve also tried using other and used the default localhost SMTP settings that GoDaddy provide, and they don’t work either).
Any email I send using ContactForm7 simply disappears. I have the Contact Form CFDB7 plugin that catches any submissions that don’t make it – so I can see all website submissions are hitting this plugin and being stored, they just aren’t appearing in any inbox.
When I use another contact form plugin (WPForms), these emails get sent, but they appear in a junk folder (sigh).
