As you already confirmed yourself, when you deactivate that plugin, the invoice number is no longer automatically created. This means the problem is with that plugin.
You may want to try this plugin instead, I believe it is almost the same except much better code quality: WooCommerce PDF Invoices Italian Add-on
Infatti dalla presentazione sul sito di wp c’è scritto:
“This WooCommerce extension automatically adds a PDF invoice to the order confirmation emails sent out to your customers. Includes a basic template (additional templates are available from WP Overnight) as well as the possibility to modify/create your own templates. In addition, you can choose to download or print invoices and packing slips from the WooCommerce order admin.”
The ‘automatic’ part is only when you have set up the attachment for that email AND when that email is sent out. Please read this, as this will explain exactly when (under normal circumstances without the additional plugin you use) the invoice number will be created: When is the PDF invoice number assigned
