edit meta post text in 2012

  • Hi,
    I’m redoing my site [locally, with MAMP and Dreamweaver CS6] using a child theme [of twenty twelve] as the existing site was cobbled together based on a tutorial theme!
    Is there a simple way to edit/control what meta post text [date, author tags, etc] are displayed? I did look at:

    but am none the wiser!
    Any ideas?
