Edit exist field

The values of the custom fields added to the checkout and saved to the order can be modified through the Flexible Checkout Fields metabox at the bottom of the Order details page:

If it is not visible there, please make sure you have ticked the Flexible Checkout Fields checkbox at Screen options:
