We have a filter you can use to create the code needed to disable the authors: wpseo_enhanced_slack_data.
In addition, you can locate the code we use to build out the estimated reading time via the following pathway: WordPress-SEO/src/presenters/slack/enhanced-data-presenter.php line 65.
