You can overwrite the whole meta with the filter wp_postratings_google_structured_data https://github.com/lesterchan/wp-postratings/blob/master/wp-postratings.php#L1221

The ratings code starts from https://github.com/lesterchan/wp-postratings/blob/master/wp-postratings.php#L1160, feel free to modify it.

I’m not developer, so I don’t know if you mean to override it via functions.php. I just changed lines:

   to $attributes = 'id="post-ratings-'.$ratings_id.'" class="post-ratings" ';//.$itemtype;
2. Сommented whole https://github.com/lesterchan/wp-postratings/blob/master/wp-postratings.php#L1160
3. https://github.com/lesterchan/wp-postratings/blob/master/wp-postratings.php#L1221
   to $google_structured_data = apply_filters( 'wp_postratings_google_structured_data', ( empty( $itemtype ) ? $ratings_meta : ( $ratings_meta ) ) );

It’s work, but is there way not to repeat it after plugin updates?
