Regarding your question (How the default shipping method works): when you check the “Check the box to set this option as the default selected choice on the cart page.” option this shipping method will be checked by default when user visits the checkout page.

the functionality you described is provided by WooCommerce out of the box.
The shipping method chosen on the cart page is repeated on the checkout page by default.

Please make the distinction between the default behavior of the WooCommerce and the behavior resulting from checking the option “Check to set this shipping method as default when placing an order”.

the default option means, that if you enable it with “Check to set this shipping method as default when placing an order”, that shipping method will be automatically checked on users’ cart and checkout page. So, if you have multiple shipping methods, and you enable it on one of them, that shipping method will be set as default. Your customer will have the option to change it, but it will be set as default. It’s a good way to promote a certain shipping method or speed up the purchasing process by choosing the most popular shipping method.

I’m still having a problem with default shipping method setting.
Please go to my staging site https://michal-szczepanski.atthost24.pl/ and add anything to a cart.
In the cart you’ll see that the default shipping method is local pickup, which is the last method on the list.

It seems that the option “Check to set this shipping method as default when placing an order” is just not working.
