Domain Mapping with Point Mapped Domains to an IP Address

Hi all,
I have a multi-site network setup using sub domains and have this plugin installed to handle domain mapping. At the moment on the Domain Mapping settings screen I have the servers IP (dedicated as there is a wildcard SSL installed) entered into the “Server IP Address” field.
Currently mapped domain point their A record to this IP address and all works really well.
My issue is that pointing the mapped domains to an IP address could cause potential problems in the future if, for whatever reason this IP has to change (new server with new host for example). It would mean re-pointing all 500 network sites which is not realistic.
I notice the setting below is called “Server CNAME domain” and this seems to indicate that I can get mapped domains to point to a CNAME instead which I can then control which IP this is sent too.
I was hoping that someone could walk me through this please? What do I enter into the “Server CNAME domain” box? Is it the network domain name? Also how would the DNS work here? What setup is needed for the mapped domain at the domain registrar (who controls the mapped domains DNS) level?
