Please note that the default Add To Cart button text displayed for variable products in category archive pages is “Select options” and without any icons. The screenshot you shared suggests you’re using a variation swatches plugin that could be displaying its own Add To Cart button.
To test for this, please could you temporarily change our plugin’s add to cart text and button background color to something different (e.g. “Test text” and change the color to red), and then see whether this is applied to both the add to cart button displayed in the single product page and the category page.
If the test change is applied to only the add to cart button in the single product page and not the category page, then it confirms that the add to cart button displayed in the latter is displayed by something else on your site (likely the variation swatches plugin you’re using).
Alternatively, you can also temporarily deactivate the variation swatches plugin and then check to see whether the add to cart button in the category page changes to the test color.
