I really like this simple plugin to allow for a GDPR cookie notice, creating a table of cookies used on a site, and allowing tracking cookies to be loaded only after a user accepts the policy.

NOTE: I did discover that on my host platform, the non-necessary cookies were not loading when the accept button was clicked. My host, WPEngine, caches content on PROD environments and had to exclude the viewed_cookie_policy cookie from caching. Once that was done, all worked perfectly.
