do entries remain when options are deleted?

Hi,
We are happily using Caldera forms but need to change an option in a drop down box.

Ideally, I want to delete the old option and in a new option but need to retain the responses for the old option. Will caldera keep the old entries even if I change the options?

For example, if the form is ‘chose your favourite flavour’ and options are chocolate, strawberry, caramel and mint, but now will be chocolate, strawberry, caramel and orange. Can I still get results for people selecting mint once I remove that option?
