On the site johannes… I saw the hCaptcha https://johannesduerr.de/kontakt/ and was able to send the form: https://prnt.sc/AmW_wGpJlkgM.

On the music… site, I also was able to send the form: https://prnt.sc/v34s1AENI95E.

What is the issue?

If you mean that hCaptcha appears not after the page load but after the first interaction with the page – it is expected behaviour. It is done by a user requesting to increase the PageSpeed score.
