Display left-side of a pipe value in CF7 Views

I’m using the below documentation to create dropdown select, containing values with pipes, e.g. “Support|[email protected]”
However, when users submit the entry, the CF7 Views plugin will display the value on the right-side of the pipe. I want CF7 Views plugin to display the value on the left-side of the pipe.
How can I do that? Thanks
