    how do i change the display of the calendar on the page to start the week at a different day?

    try under WP Settings > General > Week Starts On

    How do i get the calendar to pop-up in the FROM /TO fields on a phone?
    It works fine when on a PC but looking at it on a phone i click on the FROM field and it opens the keyboard. Is there any way to prevent that, if NOT how do i put a suggested format in the field area so users can get it correct, a ‘ghost’ text
