Display and Update only select fields

On a certain page in wordpress, can I direct a user to update only certain information in their profile by only displaying certain fields for them to update? I understand that [wp-members page=”user-profile”] would allow them to update their profile, but I only want them to be able to see and update certain ones.
Or, how can I display only certain fields on the intitial registration page while if they update their profile later then all of the fields display (or only certain ones)? I realize that unchecking the “display” box will not allow them to see that particular field upon initial regisrtation, but then later I want them to be able to update those fields that are “not displayed”.
Either paragraph above would be a solution to my problem.
I’ve seen similar questions answered, but I need to know EXACTLY which hooks to use, what file to put them in, where in the file to place them and an example of a sample code – please.
