As I understand, you would like to add variations to your variable product(s).

I don’t want to add variations to products, I’ve done that for a very long time. I want to know how display more than 15 variations on the back end edit product page. See:

The code snippet on this link does not change the number of variations to be displayed when editing the product variations.

Instead, this changes the limit on number of variations on front-end dynamically. You can read more about that on this support documentation: Change Limit on Number of Variations for Dynamic Variable Product Dropdowns

In your use case, this is a fairly complex development topic that would require customization to do it. Since custom coding is outside our scope of support, I am leaving this thread open for a bit to see if anyone can chime in to help you out.
