Discussing the usefuleness of categories

Since I’m upgrading both the WP version and theme for my site, I’m doing a lot of refining on the things I’ve learned blogging over the last few months.
When it comes to categories I wanted to really refine things, to make my site far more navigable and user-friendly by using CATEGORIES to a greater effect, especially as a means for people finding what they want in the archives.
It would be IDEAL if I could have parent / child categories as such:
Art & Design
Art & Design > Interviews
Art & Design > JPEG
Art & Design > Videos
Books
Comment & Opinion
Comment & Opinion > Guest Authors
…
Music
Music > Interviews
Music > MP3
Music > ReviewsUnfortunately it doesn’t seem like WordPress allows this (in its standard form- im no programmer so can’t write a plugin). Here is where the problems lie:
A) I can’t create two child categories called “Interviews”, even though one would be under “Art & Design” and the other “Music”, which would work in a hierarchical directory sense, but not with WordPress categories.
B) Actually it’s just A) for just now.
I wonder if anyone has an opinion on this, understands where I’m coming from, knows a solution, or perhaps could point out some facts that I’ve missed out on when it comes to this navigation issue.
