Delete (or comment out) the template tag (the_time or the_date) from your template files.

will i still see the time in my dashboard ?

Yes. What you see in the dashboard is not related to how your theme is designed (or not designed :).

EDIT. I guess you cannot really “disable the timestamp”. What I suggested is to NOT display the time/date in your theme.
