Different shipping method for Select Products

I’d like to offer different shipping methods/options for a few products/category. OR I just want to hide one of the shipping options from displaying if a certain category/product is in the cart. I would prefer the first option so I can have a different shipping description.

These products are customized so they will take longer to make and I can not offer the same day shipping option as I can with standard product.

I have downloaded a few woocommerce paid plugins (per product shipping, variable, multiple packages) and still did not figure it out.

Suggestions?
