Is it possible to have a different schema type for custom posts?

You can try to use the filter
wp_postratings_schema_itemtypeto overwrite it depending on the custom post. https://github.com/lesterchan/wp-postratings/blob/master/wp-postratings.php#L111I can’t be sure whether that works since it is not designed for that use case.
