Different in stock and out of stock text

You can add custom stock status to products and/or categories by using a plugin like https://woocommerce.com/products/custom-stock-status/

Do you know if it works with multiple out of stock options as well?

We want to let the backorders available for the customers but also showing the options I wrote earlier (7+ days, 15+ days, 20+ days, upon request).
