Different checkout process for different products

We have 3 different shipping possibilities. We have product that can be ordered online and picked up at the store. We have product that can be ordered and shipped to a home. Then we have product that can be ordered in bulk as a group purchase and shipped to a location.
In the case of store pickup we don’t want the customer to have to enter any shipping information and we don’t want anything about shipping on the acknowledgement email.
In the case of home delivery we need the customer to enter a delivery address or indicated ship to the billing address and then have that information on the acknowledgement letter.
In the case of a group order they will need to fill in where to ship it to. It may be a home or a church parking lot, etc. Then the acknowledgement email needs to have that info.
I can’t seem to figure out how to do this. Can anyone help me please?
