WooCommerce subscriptions (https://woocommerce.com/products/woocommerce-subscriptions/) will provide your store the functionality of a subscription per se, for example, a service where you will be able to process payments on a regular basis to your customers on an annual or monthly plan; upgrade or downgrade plans, provide free trials, etc.
All Products for WooCommerce Subscriptions (https://woocommerce.com/products/all-products-for-woocommerce-subscriptions/) Allows you to add the functionality of a subscription to your product, for example, let’s say you are selling raw coffee seeds, and the cost is 5 USD per bag, with this plugin you can add the feature to offer a subscription let’s say to deliver one bag monthly. This is essentially the main difference between them.
Regarding the setup, you can install both of them (this will give you more features), or you can only have one installation of All Products for WooCommerce Subscriptions (You will need WooCommerce payments to support it in this case).
