Defining FROM Name and Reply to Email

I was wondering if you knew of a filter/hook that would allow us to define the FROM Name and the Reply to Email based on blog admin information?

We’d like to enable the plugin for blogs on a server through one API and while we know we have to enable each domain in the dashboard we were hoping to write a function that would fill in the FROM Name and Reply to Email to populate based on the user info if possible. So folks don’t have to individually fill them out. We’d like to NOT have to have the Mandrill settings available to all users but those have to be filled in regardless and we’d like to populate them easily if possible.
