Defining a stream or section within a site to deliver appropriate menu

On the WordPress https://chiropractic.org.nz site I’m trying to detect a stream of pages a user has come from within the site, ie, Public, Media or Profession and on a page that can serve all streams display the appropriate menu accordign to where the user has been last. I thought using $_Session would be the way to go, I’ve used this idea before in a few CMS sites I’ve built myself in PHP, but I can’t get it working in WP. And from the research I’ve done into this it seems that Session by default is turned off and is a bit of a problem with WordPress.
Can anybody suggest an alternative approach to this problem? Basically I want to be able to define a category (Public, Media or Profession) and on the pages where required, use the category to display the appropriate menu. Is it possible to do this using categories? I’ve not found a way yet. I don’t want the category to appear on the menu in any way, just act as a stream defining variable.
