Default taxonomy category?

Nothing built in for that type of thing. As a custom alternative, you could use https://wordpress.mfields.org/2010/set-default-terms-for-your-custom-taxonomies-in-wordpress-3-0/. I’ve looked over the code and it’s legit. This would go in your theme’s functions.php file, and not in any file from our plugin.
