Deal Sales Payment Status Display not Changeable Manually

I meant, it should also be possible for admins to change the payment status manually. Because if in the Payment Settings is set to completed, all orders made are automatically set to completed even if payment is not received yet. Or saying it’s Pending / ON HOLD, and when payment is done, its not possible to change the status to COMPLETED.
Is there a way for me to make it changeable manually? How? and also how about adding some payment status like Paid.
