Cutoff posts?

I’m not even sure what I’m searching for so my results have been pretty . . .well. . . pretty wrong. I’d like to cut off the posts on any page after “x” number with a link to page two (or three or whatever) at the end.
How is this done?
Oh, and if anyone can figure out what the deal is with my menu in FF vs. IE – I will be mucho grateful. ‘Cos I don’t get it. Same code, IE does it all wrong.
