Customized fields?

Hi. I am liking this plugin. Seems to work properly. I noticed in the changelog “Added a new filter so you can add extra Stripe checkout data parameters (if you want to customize it).”

Is there any documentation to this? I wanted to ask for one additional piece of info from the customer on the checkout form.
