We use the Bookings plugin and also the Deposits plugin. It seems what is happening is initial/deposit payments are going through to the Stripe Dashboard correctly with customer details. However when the same customer makes their next payment no customer details are passed through to Stripe. As an example:

Customers can pay in full. Pay in 2 stages or 3 stages. WooCommerce Deposits creates Scheduled Orders if it is 2 or 3 stages.

When a customer pays in full or makes a deposit their details are sent through to Stripe. When a customer makes their 2nd or 3rd payment no customer details appear to be sent through to Stripe so in the Stripe Dashboard it marks the customer as Unknown (Guest) and this makes it difficult to establish if a customer has made their 2nd or 3rd payment.
