Custom status with payment/stock options

I’m using the latest version of WooCommerce and was wondering if it’s possible to customize an existing status or to add a new one to my wishes. I’m using WooCommerce POS (codecanyon) and sometimes I put stuff on lay away for a day or two. I have the option to assign this POS function to a status. By default it was set to ‘Payment Pending’ (translated from Dutch). But this status doesn’t decrease stock, so the item was still available online.

I since then changed it to ‘On Hold’ which does decrease stock but also marks it as paid, which affects my daily report since the client hasn’t actually paid yet.

So I need a status that decreases stock, but doesn’t mark the order as paid. I’ve seen some plugins that allow to add statuses, but they don’t have such options and simply act as a tag basically.
