Custom product/checkout fields

Hi,

I have a client who has workshop booking set up using standard WooCommerce.

For example,

PRODUCT1: Learn to play piano workshop
VARIATION 1: New York (1 March to 9 March 2022)
VARIATION 2: Washington (10 April to 15 April 2022)
VARIATION 3: Texas (1 May to 9 May 2022)

PRODUCT2: Learn metalwork workshop
VARIATION 1: California (10 March to 20 March 2022)
VARIATION 2: Washington (15 April to 20 April 2022)
VARIATION 3: Texas (19 May to20 May 2022)

So as an agency someone might want to book 5 people on the Texas workshop. Easy, put Qty x5 through the checkout.

**The issue is with each person having a different address, different food allergies etc. I can easily add custom fields at the checkout for the agency to fill out their address, phone, name etc, but how can I easily capture the 5 different peoples addresses etc?

I really don’t want to use a booking plugin like the Yith booking plugin because as far as i can see I’d have to fuss with calendars and I don’t want that.

I also need the method to be compatible with the Yith quotation plugin, as often customers want a quotation for the (for example) 5 people on the texas workshop so they can raise a purchase request with their manager for permission to raise an order for the 5 people on a Texas workshop for example.
