Custom order status for “payment processing” (currently On Hold)

Hello,

Would it be possible to implement a fairly simple feature related to order status when the payment is currently being processed (e.g. in case of Sofort)? That order status is currently hardcoded to “On Hold”, which can sometimes be a bit confusing/unclear (I set orders to On Hold when there’s some king of problem with them/they need attention). It would be great if a custom order status could be chosen, e.g. “Payment Processing”.

If you think that’s something that makes sense, I’d be happy to contribute the code. (I’ll start looking into it either way, but I hope it could be merged into upstream as it would be a bit of a pain to maintain another forked plugin… ?? )
