Custom Forms Helper (no GUI needed)

Is there a good go-to solution for adding moderately complex forms to theme templates? I don’t need a graphical builder like Gravity, Ninja, etc.

Ideally it would have helpers for validation and ajax.

This could be a plugin or a php class, I just want to make coding forms a bit easier!
