Custom Filter boxes (checkbox filters)

So far very happy. Just two things I have questions about:
1. How can I make the default for the filter boxes be unchecked? I’d like the users to check the filters they want not have to uncheck all the filters they don’t want.
2. How can I move categories in an other than alphabetical order? I can move around with the cursor but then when I save, it reverts back to alphabetical order.
