Custom fields in Sidebar?

I thought I’d ask this here because I’m trying to find a solution, and my Google-Fu is not working for me on this one.
At the moment I’m preparing a moc-k-up of a movie review site in WordPress which will eventually be migrated from another platform. I am using the Struct theme available on ThemeForest, although this might or might not make a difference..
What I’m wanting to do is sreate a number of custom fields to store different metadata about the review, eg. running time, rating, various RRP, rating and a few other details. Because I’m using posts to handle the review, I’m wanting to include this metadata in the widget area of the forum post. If possible, because I am supporting different types of reviews which will need different data (eg. Game reviews, movie reviews, DVD reviews) I would prefer to only display fields that actually have data. What’s the best way to achieve this? I suspect I might be adding some custom code in, I just want to make sure I’m getting that right.
As a secondary question, I’m hoping to implement some of these fields in a similar way to Tage (eg. a list of actors where if you click on the actors name, you can get a list of posts with that actor mentioned). Is this easily done?
