Custom entry fields on Custom Page Templates?

I am building a site for a client and I’d like to create some custom page templates for certain kinds of information they will be posting. This part I am pretty confident I can figure out and there is a lot of words written about creating custom pages.

But rather than hoping the client enters the information on the pages correctly, I’d rather just create custom fields for each custom page template.

Anyone know if this is possible and where I can find more information?

For clarity, this is what I am thinking of doing:

Custom Page Template:
Course Outline

Custom Fields:
– Course Name (text)
– Instructor (text)
– Day of the Week (select box)
– Start Hour (select box)
– Duration (select box)
– Description (textarea)

Custom Page Template:
Alumni Page

Custom Fields:
– Alumni Name (text)
– Year Graduated (select box)
– Major (select box)
– Details: Textarea
